Smoked Salmon Pâté
- 1 pound smoked salmon
- ¼ pound unsalted butter, softened
- ½ cup minced red onion
- ½ cup minced sweet white onion
- 1 cup chives or green part of scallion
- freshly squeezed lemon juice to taste
- horseradish to taste
- salt, to taste
- white pepper, to taste
- fresh dill for garnish
Whip butter and cream cheese until light and fluffy.
Purée the salmon in a food processor until just nicely chopped. Combine
with butter-cream cheese mixture. Add onions, chives, lemon juice,
horseradish, salt, and pepper. Combine a little at a time, so that
you can adjust amounts to taste.
